Course Description
Learn from a graduate of the University of Idaho’s Master Canner program. For the "End of the Garden" pickle we will use green beans, carrots, onions, peppers, cauliflower, and other seasonal veggies, and Bread & Butter pickles for the second recipe.
For the End of the Garden pickle, students get to rummage through the veggies and pick exactly what they want in all their jars, along with how much or how little sugar in the vinegar base. And they pick their spices, whether they want a hot pepper in it, and many other choices. Those two pickles are a good combo to make together: one sweet and one sour, one whole pieces and one cut pieces, and one is raw pack and one is hot pack. They'll learn the entire gambit of canning with vinegar!
